The Food
You’ll taste exquisite food. But don’t just expect pasta and more pasta. Chef Fabio will challenge your senses with a Mediterranean menu full of locally-sourced, fresh fruits, vegetables, legumes, beef, and seafood bright with flavor. In addition to incredible food, you’ll drink wine that represents the history and personality of the region.
We are happy to accommodate gluten-free, vegetarian, and other dietary restrictions. Please let Fabio and team know prior to your trip.
- Breakfast will be served on the Veranda each morning at 8.00am.
- Lunch is planned each day around 1.00pm. Some lunches will be at restaurants, handpicked by Fabio for their uniqueness and flavor, in quintessential Italian villages along the biking route; some lunches will be a gourmet picnic along the route; and some lunches will be back at the Villa, with plenty of time for relaxation at the pool!
- Appertivos and vino will be served around 6:30pm at the Villa. Happy hour is a wonderful time to reflect on the day's adventures.
- Dinner will be served at 8.00pm to respect and reflect Italian culture.

There was a lot of variety. Fabio offered a lot of veggies, meats and salads. To his credit, if you don’t eat grain, he accommodated that very well.
I loved going into the kitchen to help him cook…..dice carrots, fix salad, and more. Helping him was fun and he would explain things.
In terms of going out to restaurants, it was so cool to visit places we wouldn't have seen as a normal tourist.
The food was off the charts! No doubt it was a glutenous trip, but it was incredible. One of the most memorable part was hors d'oeuvres poolside every evening.
The Cycling
Italy has a rich history in cycling culture. The Giro d’Italia, Gran Fondo a Roma, L’eroica and other races have captivated the world for decades. Climbs such as Passo Giau, Passo del Mortirolo, and Rocca di Papa are bucket list routes for cyclists worldwide. Even for social cyclists and those of us without racing schedules or ambitions, the opportunity to use a bicycle as a vehicle to experience - up close and personal - the magical vistas, enchanted landscapes and access to historic villages can't be beat.
Every evening before dinner, Fabio and team will talk about the next day's ride and provide you with a detailed cycling map. Each day, the group will separate into a "fast group" and a "slow group" with a dedicated ride leader in each group. There is one support van on the route at all times, supporting both groups from a directional, maintenance and safety perspective. Many times there will be two route options: a shorter route and a longer route for you to personalize your experience. More than anything, the riding is FUN!
You may bring your own road bike, or take advantage of a pre-arranged rental. Send the measurements of your bike at home over in advance and we'll have your rental bike fit perfectly to your expectations.

I live in Colorado and have excellent cycling at my doorstep, but cycling in Tuscany was absolutely beautiful and extremely challenging. My favorite memory was riding into a small, stone village on Sunday morning just as the church bells were ringing and echoing all around us. What an intimate way to explore.
I loved that Fabio had cycling pros come in and out to join us for a few rides. It was wonderful to visit with these guest riders while riding. What an eye opening experience!
The Culture
As an Italian native, Fabio is eager to share his country's culture with you. Be ready for unique experiences like learning to cook gnocchi, sitting down to dinner with a local winemaker, riding next to local cycling legends and more - plus a few unexpected surprises! Fabio, I wanted to reach out to you to say thank you for the trip of a lifetime. It could not have been a better trip. The riding, the food, and friendships were amazing. You truly have a special thing going and we appreciate you sharing it with us.
One night, we ate dinner is a wine cellar. At another place, we went upstairs to a loft filled with 100+ year old bottles of wine. We felt the history and it was really quite fabulous.
One day we were wandering through Montepulciano and Fabio said hi to a 3rd generation metal worker in his studio. The man invited us in and made a special gift from copper for us. It was intimate and unexpected.
We had local pizza delivered to the Villa one night and it was perfectly fantastic!!! Something so simple. Pizza originated in italy and I never knew why they didn’t cut the pizza. It was the little things like that made the week unforgettable.
The last night he had local wine producer come to the Villa for dinner. He explained his own wine throughout the courses of dinner. We really enjoyed the guy talking about his grapes and their relationship with food. This was really special!
The Price
50% of the trip cost is due at the time of booking. If you cancel 90 days before trip departure, you may use these funds towards a future trip. If cancelled within 90 days of trip departure, the down payment is nonrefundable. The remaining 50% is due 30 days prior to departure.

- All lodging
- All meals including breakfast, lunch and dinner
- Beverages
- Cooking classes and workshops
- Daily ride maps and on-course ride support
- Transportation to and from the meeting spot on the first and last days
There are several things that are not included in the tour price:
- Pre/post-trip lodging is not included.
- Flights are not included.
- Bike rental is not included. You can bring your own bike or rent from us and we'll have it ready for you (according to your size specifications) at the Villa when you arrive:
- $300 for mechanical group set
- $340 for electronic group set
- $380 for E- Bike
- One night may be allocated as "free dinner time" or "date night." This meal is not included. Please also bring cash or credit card for additional gelato and cappuccino along the way!
- Beverages ordered by guests beyond normal amounts and away from group activities will be paid by the guest at the point of purchase.
- Laundry service at the Villas is available at no additional charge; Laundry service at the hotels is available for an additional charge.
